Back in March, Waverley’sRobin Hood Hotelreopened after a multimillion-dollar reno with a refreshed food menu as well as a new bistro-style eatery, Lorraine’s. Of course, only a few months later Sydney went back into lockdown. Now the pub’s owner, Dan Whitten, and executive chef Clement Marchais (ex-Peppe’s) have launched Wings ’N Burgers, a takeaway burger joint offering delivery or pick-up from the pub’s drive-through bottle-o.

Inspired by the comfort food Marchais enjoyed growing up in France, the Wings ’N Burgers menu of burgers, wings and fries channels the chef’s passion for food and travel, as well as a desire to cook simple things well.

“I always have been a big fan of American food, which is surprisingly quite similar to the [food of the] south-west of France: rich, full of flavour and all about sharing,” Marchais tellsBroadsheet. “I enjoy cooking such comfort food; to me it has a higher power of connection and links to memories and emotions. And as a chef, that is our main focus”.

A few trips around the US converted Marchais into a self-proclaimed burger purist, as he set out to understand what makes the perfect burger. As a result, every element of the burgs at Wings ’N Burgers is well considered. The OG Smash burger’s patties are made using Jack’s Creek Wagyu – also a fixture on the Robin Hood’s menus – which is smashed on a griddle to ensure caramelisation and a crisp texture. Locally sourced oak lettuce, tomato, onion and pickles, house-made potato buns and a secret sauce complete the stack. The Triple Double has two patties, and adds maple bacon and American-style mustard to the OG.

The menu also features a range of North American classics, including spicy Buffalo fried chicken (there’s a vegetarian alternative with fried cauliflower); barbeque and maple-glazed wings; loaded fries (with cheese sauce, cheese and jalapenos, or cheese and bacon) and three takes on poutine. The menu also leans into the US’s “land of plenty” philosophy with 10 types of sauce, including ranch, blue cheese, bourbon onion relish and barbeque.
